The package

A commercial kitchen floor is assessed by an environmental health officer, not by a designer. The requirements are consistent: surfaces that are impervious, smooth enough to clean and hard enough not to break down, junctions that are coved rather than square, and a floor that drains to the gully instead of holding water under the bench.

Everything else follows from daily hot wash-down and chemical cleaning. Grout is chemical-resistant where the brief allows it, falls are set in the screed rather than hoped for, and junctions with plinths, kick rails and trapped gullies are detailed before the joinery arrives. Get the drainage wrong and the kitchen is still wet at midnight.

Impervious and cleanable surfaces

Fully vitrified porcelain with low water absorption, laid with full adhesive coverage so there are no voids under a floor that gets hot water poured on it every night.

Coved junctions at every wall

Floor-to-wall junctions are coved so the wash-down runs out of the corner instead of sitting in it. Square junctions are where a food-premises inspection usually finds its first problem.

Falls that reach the gully

Grades are set in the screed and water-tested before the membrane, including under benches and around trapped gullies. A kitchen floor that ponds is a slip hazard and a cleaning failure at the same time.

Chemical and thermal resistance

Daily cleaning agents and hot wash-down attack cement-based grout. Where the specification allows it we use an epoxy or chemical-resistant grout, and we detail movement joints for the thermal cycling a kitchen floor goes through.
